Asahi was founded in 1774 in the mountain village of Kuga Gun, in the Yamaguchi prefecture. Producing only 10,800 crates a year, of which 97% is of the Junmai Daiginjo or Junmai Ginjo grades, the emphasis is on quality rather than quantity. The rice is milled down more than any other in Japan (42% on average). The goal is to produce the finest quality saké, regardless of cost!
